Quick & Easy French Toast in a Mug!

Adam is a HUGE fan of French toast. If you need any proof just take a look at his instagram profile and you’ll find countless photos of all varieties of French toast. He’s got your traditional French toast that is "macrofied" to be low fat, high protein and fiber, as well as full of flavor. He also has a Smore’s stuffed French toast, where the bread is coated in graham cracker crumbs, then placed on top one another and stuffed with marshmallow fluff, before finally being drizzled with chocolate and maple syrups. He even has a day-old donut French toast recipe that, while not "macrofied" currently, could easily be worth all the extra calories anyway.

So, you know that when he came across a microwavable mug recipe for French toast, he had to figure out how to make this work on even the toughest of diets (aka next prep). How could you beat the delicious taste of French toast combined with the speed and the efficiency of cooking it in the microwave? You make it high protein, high fiber, and don’t allow it to lack in taste. That’s what this high protein, microwavable mug French toast recipe is. Warm, bready goodness in a mug in 5 mins or less.
Ingredients:
2 slices of bread Aunt Millie’s “Healthy Goodness” Line of Low Calorie Bread (we used the Light Oatmeal Bread)
1 scoop protein (we used a vanilla whey protein)
3 tbsp Egg Whites
¼ cup of milk of choice (Kroger Carbmaster Milk for the win)
1-2 tablespoons cinnamon
2 tablespoons maple syrup (Walden Farms no calorie is an awesome choice)
1 tablespoon room temp butter (spreadable, we used a lighter alternative Shedd’s Spread)
Kosher Salt
Optional 1-2 tablespoons of chocolate, peanut butter, butterscotch or white chocolate chips

Directions:
Whisk together protein powder, egg whites, milk, cinnamon, maple syrup, and a pinch of salt in a large mug until combined.
Coat one side of the bread in butter and then cut the bread into bite size pieces and add them to the mixture in the mug. Press down lightly to ensure that all bread pieces are covered in the batter.
Sprinkle the top of the mug mixture with your chips if you choose, we went with chocolate chips here.
Microwave on HIGH 60-90 seconds. It is done when the bread starts to rise and the liquid is cooked out.
