Low-Carb Chocolate Peanut Butter Fudge

Let's have a moment of honesty... who doesn't like fudge? Rich, delicious, and full of chocolate goodness. Our Active Indulgence take on this famous treat will likely cause a schism in reality, and have you question the over-simplified dichotomy of "clean" vs. "dirty" foods. Yes, we did it. We made healthy, delicious, AND low-carb fudge.

As one of our customers and honorary taste-test winner for October put it so nicely, "It was so good, and very easy to eat. It tasted just like fudge I've had in Mackinac Island."

Anyways, without further ado:

Chocolate PB Fudge w/ Walden Farms zero-calorie chocolate syrup

Ingredients:

  • 1/3 cup of natural peanut butter (any pb will do)

  • 1 cup powdered peanut butter (we used pb2)

  • 1/2 cup coconut oil

  • 4 scoops vanilla whey protein powder (if y ou are a chocolate lover feel free to use chocolate protein instead)

  • 3 tbsp chocolate chips

  • 1/3 cup sweetener (we used truvia baking blend)

Directions:

  1. In a microwavable bowl mix the peanut butter, coconut oil, and chocolate chips, then microwave for 30-40 seconds (until it becomes a smooth, creamy mixture).

  2. Add the mixed batter from above to the protein powder, powdered peanut butter and sweetener, stirring until well combined.

  3. Line a 9x9 baking pan with aluminum foil and pour in mixture.

  4. Refrigerate 3 to 4 hours or until hardened.

  5. Remove from pan, cut into squares, and enjoy!
