We are in the midst of fall. The leaves are changing colors, it's getting a bit cooler, and we look forward to rooting for our favorite college football teams every Saturday. One can't truly experience fall without enjoying a little pumpkin spice flavor here and there (call me basic if you wish, but that sh*t is TASTY). This easy to make overnight oat recipe captures this fall-favorite flavor, while providing you with an energy-boosting, healthy, and filling breakfast! This recipe also works great as a pre-workout meal to help give you the extra "oomph" in your workout.

Ingredients:

  • 1 cup old-fashioned oats

  • 1 scoop vanilla whey protein

  • 1/2 cup milk of choice (I used Kroger Carbmaster Vanilla for added protein and less carbs)

  • 1/2 cup (120g) canned pumpkin

  • 1/2 tsp cinnamon

  • 1/4 tsp nutmeg

  • 1/4 tsp whole allspice, crushed

  • 1/4 tsp vanilla extract

  • Dash of ground cloves

*Cut the ingredients in half for a reduced-calorie option*

Directions:

  1. Whisk all ingredients until thoroughly combined.

  2. Pour into an airtight container and refrigerate overnight.

  3. Enjoy as a quick and convenient breakfast on the go!

"Macrofied": The process of manipulating ingredients to produce a better nutritional profile, usually involving increasing protein while controlling or decreasing carbs and fats.

Truvia, or erythritol, is a sugar alcohol that tastes like sugar but has very few calories. It is absorbed almost entirely in the small intestine and is excreted through urine. Erythritol has been deemed safe for consumption, and does not cause digestive issues like other sugar alcohols in quantities less than 50g per day.
