S'more Protein Cupcakes

Adam loves s'mores. In fact, he's a sucker for anything s'more flavored. It's no wonder he decided to celebrate National S'more Day with these high-protein S'more Cupcakes! The protein powder and quest bars needed for this recipe can be found at most grocery stores, and definitely at any health food store (i.e. GNC or Vitamin Shoppe). Give them a try!

 
S'more cupcakes

Cupcakes

Ingredients

  1. 1 1⁄ 2 S’mores Quest Bars

  2. 1 scoop Vanilla Protein Powder

  3. 1⁄ 4 cup Carbmaster milk (can be found at Kroger)

  4. 2 tablespoons coconut flour

  5. 2 tablespoons zero-calorie sweetener (we used truvia)

  6. 1 egg white

  7. 1⁄ 2 teaspoon baking powder

  8. 1⁄ 2 teaspoon vanilla extract

  9. Pinch of salt

Directions

  1. Preheat oven to 350°F.

  2. In a microwave-safe bowl, break one Quest Bar® into small pieces and microwave with almond milk for 45 seconds. Stir until smooth.

  3. Stir in Quest Protein Powder®, almond flour, sweetener, egg white, baking powder, vanilla extract, and salt until smooth.

  4. Pour batter into four greased (or lined) cupcake molds.

  5. Break the remaining 1⁄ 2 Quest Bar into small pieces and press an equal amount into each cupcake.

  6. Bake for 18 to 20 minutes or until an inserted toothpick comes out clean. Let cool.

 

Frosting

Ingredients

  1. 1⁄ 2 scoop Vanilla Protein Powder

  2. 1⁄ 2 scoop Chocolate Protein Powder

  3. 1⁄ 3 cup nonfat Greek yogurt

  4. 1 tablespoon zero-calorie sweetener (we used truvia)

Directions

  1. Mix Quest Protein Powders®, yogurt, and sweetener until smooth.

  2. Add to a piping bag and frost each cupcake.

 

Sprinkles

Ingredients

  1. 1⁄ 4 S’mores Quest Bar

Directions

  1. Preheat oven to 400°F.

  2. Break the 1⁄ 4 Quest Bar® into small pieces.

  3. Bake on a nonstick baking sheet for 4 to 5 minutes. Remove and let cool. Place into a mini-blender and process into crumbs.

  4. Sprinkle an equal amount onto each cupcake.
