Mixed Berry Microwave Cake

Try this quick, healthy, and super easy to make protein cake! Want something a little more decadent? You can easily substitute mixed berries for chocolate chips, and top with Halo Top ice cream for a delicious, high-protein dessert.

Ingredients

Cake

  • ¼ cup (30g) whole wheat flour

  • 1 scoop (33g) vanilla whey protein powder

  • 1 tbsp. granulated stevia or erythritol

  • ½ tsp. baking powder

  • ¼ cup milk (we used Carbmaster vanilla milk)

  • 1 whole egg

  • ¼ cup (56g) plain nonfat Greek yogurt

  • 2 tbsp. (20g) frozen mixed berries

Berry Topping

  • ⅓ cup (50g) frozen mixed berries

  • 2 tbsp. sugar free maple syrup

Instructions

  1. Mix flour, protein powder, stevia, and baking powder in a bowl. In a separate bowl, mix milk, Greek yogurt, and egg.

  2. Add wet ingredients to dry and gently mix until combined. Fold in the 2 tbsp. of mixed berries.

  3. Spray a bowl with nonstick spray. Pour batter into bowl. Microwave for about 1:30.

  4. For the berry topping, heat a small pan to medium heat. Add ⅓ cup of frozen berries and maple syrup. Let simmer for about 5 minutes then turn off the heat and let cool a little before adding on top of pancakes. Enjoy!
